Japan Needs Our Help

After the earthquake, the tsunami and the nuclear problems, I am so thankful that most of my friends in Japan are safe. One of our blogger friend resides in Fukushima was able to update us that they are OK with her family through her Facebook status. She said it took time for her to update her family and friends because they were having problems with electricity, water and communications line. Some family had generac generators on standby that is why they were able to communicate immediately while others didn’t have any. But luckily for them, the lines were restored in a few days time.

Anyway, Japan still needs our support in forms of prayers and financial aid. They need every help they can to stand and repair the damages. So if you want to donate to Japan, you can do so via Red Cross or through Global Giving who accepts Paypal payments. No donation is too small for a big cause!

6 Packed Lunches That Your Kids Will Love

Packed lunches can become a bit mundane after awhile. If you want healthy and nutritious options that your kids are sure to love, then try out these fantastic options.

1. Pasta Salad with All the Fixings: This is a nice and refreshing change from the norm, and it’s so easy to make. Just mix together a big batch of pasta salad ahead of time and throw in their favorite things. Mix in cubes of cheese, sliced olives, cucumber, tomato, and even some chopped salami—then mix with Italian dressing and top with parmesan cheese. This is super easy to make and there aren’t many kids that don’t love pasta. This is a lunch that they will love to eat and it’s actually good for them as they eat it up too.

2. Hummus with Veggies and Pita Chips: Kids love to dip things, and that seems quite universal. If you pack them a lunch that is actually nutritious and allows them to dip, then you’re both sure to be happy. Pack a substantial container of hummus and then load them up with pita chips, whole wheat crackers, and veggie slices choosing their favorites. This is a healthy and substantial lunch and since they get to dip, they will actually enjoy it.

3. Roll Up Sandwich with Some Crunch: At some point in time nearly every kid gets sick of the same old sandwich on the same old bread. So why not mix it up a little bit? Get some lavash bread because it’s perfect for rolling, and you have plenty of flavor options to choose from. Then pick their favorite lunch meat like turkey, ham, roast beef, or even chicken. Then spread on their favorite topping like mustard or mayonnaise, even hummus if they like it. Then add in something for a bit of crunch like lettuce, tomato, and maybe even some red pepper. This is an interesting and updated twist on the common sandwich and will be a nice change of pace.

4. English Muffin Pizzas: Every kid loves pizza, so why not make it for them to take in their lunch. Here you simply spread some tomato sauce on English muffin halves (whole wheat if you want to be really healthy), and then sprinkle with a couple different kinds of cheese like mozzarella and parmesan. Top with their favorite toppings like pepperoni, ham, or olives. Pop them in the toaster oven and pack it—they will gobble it up!

5. Homemade Quesadilla: You want a nutritious lunch that your child is actually going to enjoy—so why not try a quesadilla? This is so easy to make—you simply take a tortilla and spread in refried beans to start. Then throw on some cheese for melting, some tomatoes, olive, and any other favorite toppings. Fold the tortilla in half and then let it melt together in a sprayed pan on the stove. Once it’s all cooked, pack it up and serve with sides of sour cream and salsa for dipping—it’s a lunch that’s sure to please!

6. Chicken and Bean Burrito: Anything that is wrapped up into one neat and easy package is sure to please and easy to eat. Take a tortilla and spread refried beans all over it, then sprinkle with cheese, chicken, and any other favorite veggies or topping. Roll it up and you’ve got a little fiesta at lunch time!

Lunch doesn’t have to be boring and it doesn’t always have to be the same sandwich. These options are healthy and are actually sure to please even the most discerning taste.
